Salmon with Warm Arugula and Roasted Vegetable Salad

Salmon Marinade:

Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard

  • 1 teaspoon dried oregano

Instructions:

  1. Prepare the Marinade:

  2. Marinate the Salmon:

    • Pour the marinade over the salmon, making sure each fillet is well-coated.

Instructions:

  1. Preheat the Oven:
    • Preheat the oven to 400°F (200°C).
  2. Roast the Vegetables:
    • Toss the cherry tomatoes, red bell pepper, red onion, and zucchini with olive oil, salt, and pepper.
