Low-Calorie Coffee Ice Cream

Ingredients:

  • 2 cups of Greek yogurt (plain, non-fat)
  • 1 cup of almond milk (unsweetened)
  • 1/3 cup of strong brewed coffee, cooled
  • 1/3 cup of granulated sweetener (like erythritol or stevia)
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Instructions:

  1. Brew Coffee: Brew a strong cup of coffee and let it cool to room temperature.
  2. Mix Ingredients: In a bowl, combine the Greek yogurt, almond milk, cooled coffee, sweetener, vanilla extract, and a pinch of salt. Stir well until the sweetener is dissolved.
  3. Taste and Adjust: Taste the mixture and adjust the sweetness or coffee flavor according to your preference.
  4. Chill: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and place it in the freezer.
  5. Freeze: If using an ice cream maker, transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until it reaches your desired consistency. If not using an ice cream maker, stir the mixture every 30 minutes for the first few hours to prevent ice crystals from forming.
