Vanilla Cupcakes(Eggless/Optionally Vegan)

This is my basic recipe for eggless vanilla cake/cupcakes. Will update more details later. Image below is place holder.(not mine)

Ingredients:
1 cup milk
1 tsp apple cider vinegar
1 1/4 cups all-purpose flour (1 cup=120 gm APF, so 120+30 =150gm)
2 tbsp cornstarch
3/4 tsp baking powder(3gm)
1/2 tsp baking soda
1/2 tsp salt
1/3 cup canola oil(72gm)
3/4 cup sugar(150 gm)
1 1/2 tsp pure vanilla extract
1/2 vanilla bean, split lengthwise and scraped

Method:

Preheat oven to 350 F. Line muffin pan with cupcake liners. Spray with cooking spray.
Whisk the milk and vinegar in a cup and set aside for a few minutes until curdled.
Sift the dry ingredients (flour, cornstarch, baking powder, baking soda, and salt) into a large bowl and mix.
Beat together the milk mixture, oil, sugar, vanilla extract, and vanilla bean in a bowl. Sift in the dry ingredients and mix until no large lumps remain.
Fill cupcake liners two-thirds of the way and bake for 20 to 22 minutes. Transfer to a cooling rack to cool.
